This family-style chicken biryani layers spiced chicken with long-grain basmati rice, fried onion and fresh herbs for a fragrant one-pot centrepiece.
Ingredients
- 300g NAZIA 1121 Golden Sella Basmati Rice
- 500g boneless chicken thighs, cut into pieces
- 2 medium onions, thinly sliced
- 2 tomatoes, chopped
- 150g plain yogurt
- 2 tbsp oil or ghee
- 1 tbsp ginger-garlic paste
- 2 tbsp NAZIA Biryani Masala
- 1 tsp NAZIA Garam Masala
- 1/2 tsp NAZIA Ground Cumin
- 1/2 tsp NAZIA Ground Coriander
- 2 green chillies, slit
- A small handful each of fresh mint and coriander
- Salt, to taste
Method
- Rinse the rice until the water runs mostly clear, then soak for 20 minutes and drain.
- Heat the oil or ghee in a heavy pan. Fry the onions until deep golden; reserve a small handful for the final layer.
- Add ginger-garlic paste, chicken, tomatoes, Biryani Masala, Garam Masala, cumin and coriander. Cook until the chicken is nearly done and the masala is thick.
- Stir in the yogurt and green chillies. Cook for a few minutes, then season to taste.
- In a separate pan, boil the rice in salted water until about 70% cooked. Drain well.
- Layer the rice over the chicken. Scatter over the reserved onions, mint and coriander. Cover tightly and cook on very low heat for 15-20 minutes.
- Rest for 5 minutes, then gently lift the rice through the chicken before serving.
